Barbacoa in Mexico, refers to the local indigenous variation of the method of cooking in a pit or earth oven. It generally refers to slow-cooking whole sheep, whole cows  or whole goats in a wood-fired oven "hole dug in the ground", and covered with Maguey Leaves.

Lamb Consomme:  Slow cooked at the Rancho, in underground pit wood-fired oven, with maguey leaves.  The consome refers to the juicy bone broth resulting from cooking Lamb in slow heat,  "Consome con Garbanzo"   (Lamb Bone Broth with Chickpeas) which results as a juicy and healthy by-product of slow steam cooking the whole lamb.
