Homestyle Rib Stew (Cast Iron / Dutch Oven)

Ingredients:

  • 1 kg Rib Stew Meat (Braising) 🍖
  • 2 tbsp beef tallow or butter 🧈
  • 1 onion, diced 🧅
  • 3 garlic cloves, crushed 🧄
  • 2 carrots, chopped 🥕
  • 2 potatoes, cubed 🥔
  • 1 cup crushed tomato 🍅
  • 3 cups beef broth 🥣
  • 1 tsp smoked paprika
  • 1 tsp dried thyme 🌿
  • Salt & black pepper to taste

Instructions:

  1. Sear the meat in hot tallow until deeply browned on all sides. Remove and set aside.
  2. In the same pot, sauté onion, garlic, and carrots until softened.
  3. Add tomato, broth, spices, and return the meat to the pot.
  4. Cover and slow cook on low heat for ~3 hours.
  5. Add potatoes in the last 45 minutes.
  6. Finish with a pinch of smoked salt or a spoon of butter for richness.

👉 Result: fall-apart tender beef, rich velvety broth, deep ranch-style flavor.
