The Goat Shanks:  are meaty muscle cuts that melt in your mouth when slow-braised. When slow cooked goat shanks are great for incredible osso buco dish. The reason for cutting it osso bucco style is to expose the richness of the bone marrow that adds nutrients and flavor to your meal.  Goat meat is lean meat with a deep, rich flavour. The Grass-fed goat has a better ratio of Omega 3 to Omega 6, is high in antioxidants such as vitamin E and contains higher vitamin and mineral levels than other red meats.
