This Rolled Lamb Shoulder Roast comes from Eternal Spring | Pasture-Finished Lamb, raised year-round on open pastizal in Yucatán’s natural spring climate. Each country-cut roast is expertly deboned, rolled, and tied for elegant presentation and even cooking.
The rolled shoulder roast is the entire lamb shoulder muscle, deboned and rolled into a compact cylinder, then tied with butcher's twine for uniform shape and easy carving. This well-marbled cut delivers rich, deep lamb flavor with tender, succulent texture when slow-roasted or braised. Average weight: 3–5 lbs.
