This boneless, squared-cut lamb shoulder comes from our Eternal Spring | Pasture-Finished Lamb, raised year-round on open pastizal in Yucatán’s natural spring climate. The squared-cut lamb shoulder is a boneless, trimmed section from the lamb's front quarter, cut into a uniform rectangular shape for even cooking and elegant presentation. This well-marbled cut delivers rich, deep lamb flavor with tender, succulent texture when slow-cooked or roasted. Average weight: 2–3 lbs. A nose-to-tail essential that showcases the shoulder's versatility—perfect for roasting whole, cutting into steaks, or cubing for stews.
