Some coffees introduce you to a place. This one introduces you to its people.

In the mountains of Huatusco, Veracruz, small family farms grow 100% Arabica coffee beneath native shade trees. Volcanic soil, mountain mist and a sheltered canopy provide the setting; generations of cafeticultores supply the knowledge. Ripe cherries are picked by hand, with care that begins long before the first cup.

These are the origins of Café Finca Santa María: coffee grown without synthetic pesticides or fertilizers, brought from family cooperatives to a local roaster who knows what she wants to preserve.

The Roaster: Xochitl Moreno Estrada

Based in Mérida, Yucatan;  Xochil is both the entrepreneur representing Finca Santa María and the roaster behind your cup. Her small-batch medium roast brings forward a rich, rounded character while allowing the coffee’s origin to remain part of the conversation.

As she puts it: “En Café Finca Santa María creemos que una gran taza de café comienza desde el origen.” A great cup begins at its source.

The Coffee Man: Steven Girotto

Italian roots, exacting Australian working standards and a lifelong interest in pure food have shaped Steve’s palate. A specialty coffee entrepreneur, barista and founding charter member of our Makers Market, he brings the experience of running gourmet organic coffee shops—and chooses this coffee for his own daily cup and business.

His tasting note:

“Exceptionally smooth. A medium roast, beautifully handled by Xochilt: a rich, full-bodied cup with deep notes of dark chocolate, toasted nuts and brown sugar.”

These are tasting notes, naturally expressed by the coffee—not added ingredients.

The Rancher: Omar

Omar’s way is old-fashioned: first the soil, then what grows upon it, then the hands that bring it to your table. The same instinct that guides his ranch draws him to this coffee’s native shade, patient cultivation and family stewardship. For him, care begins at the source.

Huatusco’s old association with rabbits and trees especially delights him—a landscape that speaks to his rancher’s imagination. What earns the coffee its place at Rancher’s Table, however, is the care behind the actual crop and the pleasure in the cup. We drink it ourselves, gladly.

The Result: Exceptional by Nature, Refined by Experience

Volcanic soil. Native shade. Carefully picked Arabica. Family cooperatives carry the growing tradition forward; Xóchitl reveals its character through small-batch roasting; Steve’s well-traveled palate, obsession with perfection and exacting coffee expertise affirm what reaches the cup. Together, they deliver what earns a place at your table: remarkable origins, thoughtful hands and an exceptionally smooth coffee worth returning to.
