Our Guajolote PaΓ­s comes from Narragansett, Bourbon Red, and Sweetgrass heritage crosses. These birds develop at a very slow, natural pace, spending their days roaming our wooded land, hunting insects, and foraging beneath the trees. Their wings remain unclipped, and they roost in the branches at night.

A different turkey at your table

Compared with our Broad Breasted turkeys, Guajolote PaΓ­s has a smaller breast and a more balanced distribution of breast and leg meat. Its texture is firmer and more substantial, with a satisfying bite, darker leg meat, and a deeper turkey flavor.

Roasting brings out that character: flavorful meat, crisp skin when properly prepared, and rich pan juices for gravy. The legs reward gentle cooking until tender, while the smaller breast benefits from care against overcooking. This is a bird for people who appreciate the flavor and texture of traditional poultry.

Pastizal Raised β€” nourished by our land

Our Guajolotes roam freely through YucatΓ‘n woodland, foraging among ramΓ³n, huaxΓ­n, moringa, and chaya, with 24/7 access to natural cenote spring water. We complement their foraging with pigeon peas, aquatic greens, and other carefully chosen ranch nourishment;Β  like papaya, plantains, other native plants and fruits, allowing each bird to develop at its own slow, natural pace.

They grow under the attentive care of local people rooted in this land and its traditionsβ€”where the guajolote holds a sacred place in ancestral memory, connecting the forest, the family, and the table.

Your bird, your preparation

Choose approximately 8 lb (3.6 kg), 12 lb (5.4 kg), or 16 lb (7.3 kg):

  • Traditional β€” Whole Bird

  • Quartered β€” Four Portions

Each bird includes a separate Bone Broth Pack with giblets, neck, and feetβ€”for a flavorful stock that carries the meal further.

Carefully chilled after harvest, rested under controlled refrigeration, and MAP sealed for dispatch. Actual whole-bird weights may vary by Β±5%.

Preparation and delivery

Allow 7 business days for preparation, followed by dispatch and route-dependent transit. Your turkey may ship fresh and chilled or frozen; we will confirm its condition for your order. Requesting an entirely frozen order may extend preparation to 12 days.
